Breakfast
Most of the time breakfast is served
under the pergola in the courtyard overlooking the plain and the sea.
It includes tea, coffee, Cretan herbal mountain tea, local honey and
yogurt, home-made marmalades, muesli, fresh seasonal fruits from the
gardens, freshly laid eggs, as well as a Cretan breakfast (herbal
tea, honey, rusk, oregano, organic olive oil, olives). Upon request:
fresh ewe’s milk from the shepherd’s sheep.
Breakfast is optional.
Meals
Meals
are also served outside under the pergola in the courtyard. During
cool nights, however, they are served in the dining room near the
kitchen and by the fireplace (a pair of swallows returns every year
in spring, to lay its eggs in a nest under the beams of the dining
room).
The meals are a true opportunity to familiarize oneself with the Cretan
cuisine and hospitality. Old grandma’s recipes are resurrected and
prepared with olive oil, herbs, leaves, blossoms, fruits and
vegetables decorating the dishes, after having first been adjusted to
the spirit and the demands of our time.
The
ingredients are produced in Kostas’s organic garden or in the
neighbours’ gardens; other products are bought from the small shops
of the neighbouring area. The wines come from the surrounding
vineyards, the cheese, yogurt and meat from the pasturages of the
nearby mountains.
Meals: one or two evenings a week.
